What "Homemade" Actually Means Here
Every deli sign in America says homemade. It's the most abused word in the food business. So here's what it means at 502 Waverly Ave, specifically. Before the Doors Open
The morning starts well before 8 AM. Salads get made — macaroni, potato, coleslaw, tuna, chicken, egg, tri-color pasta, tomato cucumber onion. Not opened. Made.
The beef gets ground and pressed here, by us, into the patties that become our Burgers by the Box. The chicken fingers get hand-breaded, not pulled from a freezer bag. And nothing gets sliced until somebody orders it.
Why We Do It the Slow Way
Because you can taste it, and because we'd rather be the place people drive past two other delis to reach.
It's also the first of our three pillars — Quality, Customers, Community — and pillars only count if they cost you something. Grinding your own beef costs time. Making ten salads from scratch every morning costs time. Slicing to order costs time on every single ticket.
We think that's the job.
The Ingredient List Is Short and Boring
Boar's Head cold cuts. Bell & Evans chicken. Vrola premium steaks. Beef we grind ourselves. That's it. There's no clever sourcing story here — just good products, handled by people who care, in a small deli in Neptune.
